Understanding Nigiri: The Art of Two Ingredients

Nigiri — from nigirizushi, meaning "hand-pressed sushi" — is perhaps the purest expression of Japanese culinary philosophy. Two elements: a small mound of seasoned rice and a slice of fish. Nothing more. Yet within that simplicity lies extraordinary depth. The rice must be at body temperature, seasoned with just enough vinegar, sugar, and salt to complement rather than compete. The fish must be sliced at precisely the right angle and thickness for each species.

At SHŌTŌ, the sushi counter elevates this tradition with premium sourcing — from Hokkaido scallops and Japanese sweet shrimp flown in for their brevity of season, to rare O Toro from Atlantic bluefin tuna. The SHŌTŌ Special Sushi selections then push the form further: seared salmon belly with shaved black truffle; A5 Wagyu with smoky foie gras and ponzu. Each is a composition that respects the tradition while celebrating what a world-class kitchen can achieve.

Japanese Sake: A Brief Guide for the Curious

Sake is far more diverse than most Western diners expect. The term itself simply means "Japanese rice wine" — a fermented beverage made from rice, water, koji mold, and yeast. But within that definition lies an enormous spectrum of flavor, from the crisp and dry to the rich and fruity.

At SHŌTŌ, the sake selection spans the key grades. Junmai Daiginjo — made with rice polished to at least 50% of its original size — represents the most refined expression: fragrant, elegant, and complex. The Ozé X Rosé Junmai Daiginjo on the menu is a striking example, its pale blush color the result of a rare red koji fermentation. For those new to sake, the Joto Junmai is an excellent starting point — food-friendly, balanced, and deeply satisfying alongside the robata menu.
